#BLW Chickbreast Coconut Curry slow cooker dump and go

Ingredients

  • 1-1 1/2 lbs boneless skinless chicken breasts
  • 1 13.5-oz can unsweetened coconut milk
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1 medium onion, cut into strips
  • 1 head of broccoli, cut into florets

Instructions


1. In a bowl, stir coconut milk with spices.
2. Add chicken, bell pepper, and onion to the bottom of a slow cooker and pour coconut milk spice mixture over the top.
3. Cook on low for 3 hours. Add broccoli and cook for 1 additional hour.
4. Check to ensure chicken has reached an internal temperature of 165 degrees before serving.
