Latkes

  • 3 grated potatoes
  • 1 grated onion
  • 3 eggs
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 cup of flour
  • 1 tablespoon oil
  • 2 teaspoon baking powder
  • Oil for frying

Drain water from the potatoes (squeeze the fluid out using a cheesecloth or bake potatoes). Blend other ingredients. Fry in oil thin and crisp.

Can also use a food processor to grate onion and potatoes.

Serve with applesauce!

Tip – to ensure pan is hot sprinkle water to the pan.
