Szechaun Green Beans with Tofu

Serves: 2. Time: 10 mins.

Ingredients

  • 1 pound green beans
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic chili paste or Sambal Oelek or more to taste
  • ½ teaspoon sesame oil

Instructions

Rinse and trim green beans. Pat dry. Heat oil in a skillet over medium-high heat. Add green beans and stir-fry 3-4 minutes.Add garlic and ginger, cook 30 seconds, or until fragrant. Stir in remaining ingredients and cook 3 minutes or until beans are tender-crisp and sauce is slightly thickened. Set aside.

Stir Fry Tofu

Ingredients

  • 15oz extra firm tofu/one pack
  • 2 tablespoons soy sauce
  • 2 tablespoons of chinese five spice
  • 1 tablespoon of cornstarch
  • ½ teaspoon sesame oil
  • ½  teaspoon of rice vinegar (optional)
  • ½  teaspoon of honey (optional)

Instructions

Prepare tofu by draining and pressing all the liquid out. Cut into bite sized cubes. Prepare sauce, In a medium bowl, whisk together soy sauce, rice vinegar, honey, ginger, and garlic. Heat 2 teaspoons of olive oil in a large non-stick skillet over high heat. When the oil is hot, add Chinese five spice powder and stir until fragrant, about 2 minutes. Add tofu and salt, then cook for 3-4 minutes or until tofu begins to brown. Add green beans back in skillet serve over rice.
