I am very sensitive to spice. So please adjust the amount of Green Curry Paste to your own liking.
Make rice in rice cooker (2 cups).
Pan fry 2 chicken breast. Sear each side on high, then cook on medium until cooked. Cut chicken to bit size pieces.
In a separate pan, heat desired amount of green curry paste, we used 1/4 tablespoon of Blue Dragon’s Green Curry Paste with a full can of coconut milk.
Add desired vegetables and simmer. We used carrots and broccoli. Add chicken to the vegetable pan and serve with rice.
