Preheat oven to 350°F and grease a cast iron pan (or pie plate). Cut sweet potato in thin rounds. Layer sweet potato in concentric rounds on the bottom and sides of cast pan as this is your crust. Bake for 20 min and remove from oven.
In a separate pan, saute 1/2 onion and 1 bag of fresh spinach for 3 minutes.
Increase oven temperature to 375°F.
Transfer onion and spinach to cast iron pan.
Mix together 2 large egg whites, 4 large eggs, and 1/2 cup of milk.
Pour mixture on top of onion and spinach in your cast iron pan.
Sprinkle Feta (about 1/3 cup), and salt and pepper to taste.
Bake for 35 minutes or until egg has set.
*Yams are great alternative as well.
