Banh Mi

Making this Fusion Banh Mi was lots of fun! We essentially made a hot dog on the grill and used pickled carrots and cucumbers and added some fresh cilantro and basil from the garden. We used regular mayo mixed with with a little bit of chipotle powder and hoisin sauce as the spread. Don’t be afraid to sprinkle some lime and fish sauce!

Next time we will try to marinate our own meat.

Ingredients for pickled veggies

  • 1/2 cup of hot tap water
  • 1/4 cup rice wine vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon of salt
  • 2 very thinly sliced carrots (or shredded)
  • 1/2 half very thinly sliced cucumber
  • 1-2 daikon radishes very thinly sliced

Instructions

Mix together hot water and sugar until it dissolves, add in salt and veggies and refrigerate covered for 30 minutes.
