Delicata Squash Taco

Delicata squash are very versatile and can be served as a side on its own or part of the main dish, anywhere from taco to pasta. Unlike other types of gourds, delicata squash cooks very fast.

Pre heat oven to 400°F. Grease a baking sheet. Prepare delicata squash by cutting it in half lengthwise, and scooping out the seeds. Slice squash into rounds or half moons.

Mix with oil, salt and pepper, and seasoning of choice depending on what you’re eating it with. I used a dash of chilli, paprika, garlic, cumin, and oregano.

Bake at 400°F for 15 minutes and that’s it!

Served with caramelized red onions, shredded lettuce and cheese, diced shallots, and peach salsa and sour cream!
