Pre-heat oven to 400°F. Prepare a greased baking sheet.
Prepare the squash by cutting it lengthwise in half and scoop out the seeds.
Drizzle 1 tablespoon of oil on the flesh side of the squash and sprinkle salt over the squash.
Place cut side down on the greased pan and bake for 40 minuets until you can pierce flesh easily with a fork.
Meanwhile prepare the stuffing.
Cook the quinoa according to instructions.
Fry the bacon, red peppers, onions, garlic, and kale together.
Divide the fried mixture evenly into the two halves.
Return to oven and bake for another 15 minutes.
